    Los fosfolípidos son derivados grasos en los que un ácido graso ha sido reemplazado por un grupo fosfato y una de varias moléculas que contienen nitrógeno.

    Ejemplo 2.4.1: Fosfatidiletanolamina (también conocida como cefalina)

    Las cadenas de hidrocarburos son hidrofóbicas (como en todas las grasas). Sin embargo, las cargas en los grupos fosfato y amino (en rojo) hacen que esa porción de la molécula sea hidrófila. El resultado es una molécula anfifílica.

    Los fosfolípidos como la fosfatidiletanolamina son constituyentes principales de las membranas celulares. Estas moléculas forman una bicapa de fosfolípidos con sus cabezas hidrófilas (polares) enfrentadas a su entorno acuoso (por ejemplo, el citosol) y sus colas hidrofóbicas enfrentadas entre sí.
