Las Buenas Prácticas de Manufactura (GMP) se escriben e implementan para una planta o producto alimenticio específico como un programa de prerrequisito para los Controles Preventivos para Alimentos Humanos. Los GMP reducen el riesgo de peligros que podrían ocurrir debido a las condiciones del personal y de la planta.
Metodología
Lea a través de las Buenas Prácticas de Manufactura Vigentes en el Código de Reglamentos Federales Título 21 Parte 117. Luego escribe Buenas Prácticas de Manufactura para tu producto y proceso. Enfócate en las GMP que sean más relevantes. Encuadre su GMP para adaptarse a una operación a escala de planta. Sus GMP también deberán seguirse lo más cerca posible durante la ampliación en el laboratorio.
