- Las enfermedades transmitidas por los alimentos suelen ser causadas por la contaminación cruzada de alguna forma, por lo que se deben tomar medidas efectivas para evitar la transferencia de contaminantes en cada etapa del proceso de producción.
- El control de la temperatura es una forma crítica de gestionar la seguridad alimentaria, ya que se calientan y enfrían adecuadamente los alimentos y se limita el tiempo que los alimentos potencialmente peligrosos pasan en la zona de peligro.
- La higiene personal, la limpieza de equipos y herramientas, el control de plagas y el saneamiento ambiental son áreas a examinar al considerar la capacidad de las operaciones para controlar la contaminación cruzada.
