La sal es muy estable y no se estropean en condiciones ordinarias. Sin embargo, puede tener una ligera tendencia a absorber la humedad y volverse algo grumoso y duro. Por lo tanto, es recomendable guardarlo en un lugar limpio, fresco y seco. En la medida en que la sal puede absorber olores, el trastero debe estar libre de cualquier olor que pueda ser absorto y transportado por la sal.
