    • 5.1: Introducción
      En este capítulo, analizamos las propiedades y el mecanismo de acción de las enzimas. Estos incluyen el cambio alostérico (ajuste inducido, regulación enzimática), eventos energéticos (cambios en la energía de activación) y cómo funcionan las enzimas en sistemas abiertos y cerrados (experimentales). Cualquier catalizador, por definición, acelera una reacción química. Pero las enzimas y los catalizadores inorgánicos difieren en formas importantes.
    • 5.2: Enzimas
      Para 1941, sus estudios correlacionando mutaciones con deficiencias enzimáticas en Neurospora crassa (moho del pan) y Drosophila melanogaster llevaron a George Beadle y Edward Tatum a proponer la hipótesis de un gen/una enzima en 1941. En 1958, compartieron el Premio Nobel de Fisiología y Medicina por esta obra.
