Vienen en dos sabores: (1) hidrocarburos alifáticos que consisten en cadenas lineales de átomos de carbono y (2) hidrocarburos aromáticos que consisten en anillos cerrados de átomos de carbono.
Hidrocarburos alifáticos
El más simple es el metano, CH 4. Siguiente es etano, C 2 H 6.
Los ácidos grasos en las grasas son hidrocarburos alifáticos. Si una cadena contiene todos los átomos de hidrógeno que puede, se dice que la molécula está saturada. Los ácidos grasos en la triestearato están todos saturados.
Si dos átomos de carbono adyacentes pierden cada uno un átomo de hidrógeno, se forma un doble enlace entre ellos. Se dice que tal molécula es insaturada.
Ejemplo: Etileno H 2 C=CH 2
Los ácidos grasos en la trilinoleína y el ácido linolénico son ejemplos de ácidos grasos insaturados
Hidrocarburos Aromáticos
El bloque de construcción de los hidrocarburos aromáticos es el anillo de benceno. La disposición de los átomos se muestra a la izquierda. La versión en el centro se utiliza a menudo para simplificar diagramas de estructuras moleculares. Los tres dobles enlaces no están restringidos a las posiciones mostradas sino que son libres de pasar alrededor del anillo. Esto a veces se indica dibujando el anillo de benceno ya que está en el extremo derecho.
Algunos ejemplos de moléculas biológicas que incorporan el anillo de benceno:
- los aminoácidos tirosina y fenilalanina
- colesterol y sus diversos derivados, como las hormonas sexuales: estrógenos y testosterona
- el herbicida, 2,4-D
El carotenoide, el betacaroteno, es un hidrocarburo que tiene porciones tanto alifáticas como aromáticas.
