Los valores mapeados se muestran como que van desde menos de 2,000 calorías por persona (por ejemplo, en Etiopía y Tanzania) hasta el rango de 2,000-2,500 calorías por persona, lo que abarca varios países de África así como India y otros países de Asia además de América Latina y el Caribe. Las calorías son una forma razonable de comenzar a comprender patrones a gran escala relacionados con la falta de acceso a los alimentos en todo el mundo. Sin embargo, solo mirar las calorías esconde otros aspectos de la nutrición humana, como la necesidad de una dieta diversa que satisfaga los requerimientos humanos de vitaminas, minerales y fibra dietética, los cuales fueron descritos en el módulo 3.
